Ceviche with Maras Salt

Ceviche with a touch of Maras Sal

2 People
– 600 grams of fish of your choice (fillet)
– 1 red onion, chopped in small cubes
– 3 tablespoons of vegetable oil
– ½ tablespoons of garlic in paste
– 3 tomatoes, without seeds and chopped in cubes
– 3 tablespoons of Aji Mirasol (Dry aji in a paste)
– 1 yellow pepper (aji amarillo) chopped in julienne
– ½ tablespoon of chopped cilantro
– ½ tablespoon of parsley
– ¼ tablespoon of dry oregano
– ½ cup of peas
– Maras Salt (Peruvian Pink Salt)
– Pepper
– 2 bay leaves
– 1 liter of fish stock, based on fish, garlic and 1 bay leave
– 1 onion chopped in julienne (thick)

In a pot heat the oil and fry the garlic. Add the onion, stir, and add tomato, salt and pepper. Add the aji mirasol and the bay leaf. Let cook for 5 minutes and add the fish stock 3 teaspoon and let cook for 20 minutes more; add the onion in wedges (thick julienne), the yellow pepper, peas (let cook for 3 minutes) mix, add cilantro, parsley and oregano . Add the fish fillet (previously with Maras Salt and pepper) and let it cook for 3 minutes over low heat. Serve with boiled potatoes and rice of course!
